Pineapple and Beet Crisp
a Punta Mona favorite

Ingredients:

  • 1 whole pineapple

  • 1 extra large beet

  • 3 cups oats

  • 1 cup shredded coconut

  • 1/4 cup coconut oil

  • 1/4 cup honey or brown sugar

 

Directions:

  • Peel and dice pineapple and beet (make a nice tea with the pineapple rind and core!)

  • Add pineapple, beet, coconut and 1 cup water into a deep pan or shallow pot

  • Simmer on medium heat until water reduces completely and pineapple and beet are soft

  • In a separate bowl combine the oats, sweetener and coconut oil

  • Spread 1 cup of the oat mixture into a deep tray

  • Pour all of the cooked pineapple filling on top of the oats

  • Top with the remaining oat mixture and let the magic meld together for at least 10 minutes, then dig in!
